IN THE GARDEN
**Grapes should be in abundance. Consider using them in your salads. Grapes are rich in potassium and iron, aids in the elimination of uric acid from the system, stimulates the secretion of digestive juices, cleansing and good for weight loss.
**It’s time to clear garden plots of vegetable plants that have finished producing. Consider establishing a compost area where you can discard this foliage along with grass cuttings.
**Apples are plentiful. The pectin in the skin is beneficial to the heart, so eat your apples rather than juice them.

FOOD FOR THOUGHT
Parsley is believed to be one of the “scented herbs” mentioned in the Bible (Song of Solomon 5:13). The parsley used in the Middle East has larger leaves than most parsley in the United States.
Parsley is a rich source of vitamin A and C. Myristicin and apiol, two chemicals found in parsley act as a mild laxative and strong diuretic. This diuretic action may help control high blood pressure. In Germany, parsley tea is often prescribed for that purpose. Research also shows that parsley blocks the formation of histamines that trigger allergy attacks, digestive problems and gas, kidney disease, bad breath, bed-wetting and hypertension. It is also believed to help in restoring lung, liver, bladder, kidney, thyroid and stomach function.

INTERESTING FACTS TO KNOW
**Choose purified water over other beverages. Pure water has no calories, no caffeine, no harmful chemicals (such as those found in diet beverages that have aspartame or saccharine). Pure water has tremendous health benefits for every cell of the body.

I am a 51 year old mother of three and grandmother of six. I have been a student of health since I was 16 years old and was introduced to Adele Davis’ book Let’s Cook It Right. I had my first child when I was 19 years old and joined my first health food store co-op. Everyone in my family thought I was crazy (they still do), they do however love me anyway.
The whole time I was raising my children, we did not have health insurance, so I made it my mission to provide the healthiest eating I could on a one-person income to keep them from having to go see a doctor. I learned about various herbs, grew a vegetable garden, milled my own flour to make whole grain bread and milked a goat two times a day.
When I turned 38, I went back to school to get a degree in nursing. By the time I finished my third year of nursing school, I realized that Western medicine did not appeal a whole lot to me. It was/is so drug and symptom oriented. I was interested in health and teaching and prevention!
After graduating nursing school, I worked in a clinic for five years. What I saw there only reaffirmed my distaste for Western medicine. Those poor patients were coming into the clinic with chronic illness, looking to the doctor gods for answers. What they were receiving were large lists of medications, no healing and ultimately sicker, sometimes to the point of death.
One day, in looking for healthy diets, I came across a website that talked about a raw food diet. I followed link after link and became more excited at each stop. This made sense. An alkaline diet! Wow! Living foods! Live enzymes! I decided to try it for 30 days and have been going ever since. I love how I feel. I need less sleep, have lost weight and my energy is great. I don’t have the same aches and pains in joints that had begun to plague my days. This lifestyle has changed who I am, and now I want to tell everyone else all about it. I love trying new recipes and trying them out on friends and family.
With my raw food certifications I can now do what I felt called to do when I chose nursing as a career. I can guide people to optimal health and feel honest about it and I can talk about the healing power of raw food, sunshine, clean water and adequate rest. I want everyone to feel as revitalized as I do.

FAVORITE RECIPES

Raw Sprouted Hummus
2 cups sprouted chickpeas
½ cup fresh parsley, chopped
¼ cup pitted black olive (I only add this if I have it and it is still wonderful)
¼ cup fresh squeezed lemon juice
½ teaspoon minced jalapeno
1 tablespoon minced garlic
¼ cup tahini (I always substitute almond butter here)
1/4 to ½ cup olive oil
¼ cup Nama Shoyu or 1 ½ teaspoons Celtic Sea Salt
Juliano’s recipe asks for 1 teaspoon of his Mexican Spice Chutney which is probably great but I have never used it and this recipe is always amazing!
Place all ingredients in the food processor and blend until creamy, using a rubber scraper to help the hummus turn over.

Nut Loaf Patties
1 ½ cups raw almonds, soaked for 3 to 4 hours, drained and dried
1 ½ cups raw walnuts, soaked for 3 to 4 hours, drained and dried
1 ½ cups raw sunflower seeds, soaked for 3 to 4 hours, drained and dried
2 ½ cups chopped Portobello mushrooms, briefly marinated in 2 to 3 tablespoons
Nama Shoyu
1 yellow onion (I use red)
3 cups chopped celery
½ bunch parsley, stems removed and leaves chopped
10 cloves garlic, minced
1/3 cup olive oil
2 tablespoons cumin seed
1 cup Nama Shoyu
½ bunch tarragon, stems removed and leaves chopped
½ teaspoon cayenne pepper (I omit this)
Matt’s recipe says to use a Green Star Juicer to homogenize the nuts and seeds. I just put them through the food processor with an additional 1/3 cup olive oil. Transfer to a mixing bowl, add the remaining ingredients, and mix thoroughly, making sure to break apart any clumps.
Form the mixture into round patties approximately ½ inch thick and 3 inches in diameter, place patties on Teflex sheet. Dehydrate at 100 degrees for 12 hours. Flip the tray over onto an empty tray, and gently peel the Teflex sheet off the patties. Return to the dehydrator for up to 20 hours (I did not have to do that anywhere near 20 more hours, check after 6).
